All Things Crock Pot

While googling how to make Pumpkin Spiced Latte's I found this great Blog

A Year of SlowCooking - it's great for all of us who love to use the crock pot.

A couple of you asked about my Chicken Catchatori from Monday here's the run down.

While a lot of you had off on Monday I had to work but was able to work from home so that made working just fine for me. Ok sorry back to the catchatori....

Because I decided to workout rather then prep dinner (and or I forgot) I had to brown the chicken on the stove before I put it in the crockpot. I then cut up one red and green pepper and an onion. I used a jar and a half of pasta sauce which was just enough. I cut up the chicken placed it with the sauce and veggies, we also added fresh basil from the garden which may be one of our last time we'll be able to use it for the year and a little parm. I let it cook for about 4 hours, it was pretty good, easy and quick. If I was to prep it in the morning I would definitely have left it on low all day, I don't have a problem letting it cook while I'm not home.

What is your lunch bag?

One of my favorite things to make for lunch is "Burritos-less Burritos" or those of you familiar with BoLoCo Burritos Bowls, they include everything you would have in a burrito just minus the tortilla.

Here is a little run down on how I get this to be a yummy hot mess:

"Kimbarrito's Burritos-Less Burritos"

- 3 boneless skinless chicken breast
- 2 packages Success Boil in a Bag rice (brown rice)
- 1 jar medium salsa
- 1 can black beans
- 1 can red kidney beans
- 1 can pinto beans
- reduced fat shredded cheese (I use cheddar)
- low-fat sour cream

First I boil the chicken and rice, I put the chicken on first as it takes longer to cook thoroughly and I put both bags of rice in boiling water and those it says 10 min I find it takes about 12-13 min. After the chicken is done I cut it into random size cubes, salt and pepper after all is cut up and by this time the rice is finished, drain the rice and pour one bag into a casserole dish from then I start to add all 3 beans, salsa, sour cream, cheese and chicken, there is no laying it is more mixed together. After everything is mixed together I top with a little extra cheese for luck!

Sorry it is not the best picture, but believe me it is good good good! I dished out servings into lunch size tupperware containers and have been enjoying all week long! I love it is full of fiber, protein and flavor!







Also I had a little leftover and ended up using it as filling to make a quesadilla for a quick yummy dinner!

So there you have it from the Kimba Kitchen Kookbook, not sure it's a crowd pleaser but it's a house pleaser at chez Kimba!

Cheese and sour cream make any meal! And the oh so cute Nina at According to Nina suggested pairing this dish with a yummy margarita! I would love to cook up this dish and host you all with "Nina Margs" on the side!

Got Pics?

Yes, but I am having a heck of a time trying to load them.

I have the laundry in and I'm about to make dinner. We're having a Chicken Caesar Salad, very much looking forward to it. I got frozen grilled chicken strips from Trader Joe's, Caesar Salad mix and packaged romaine lettuce. My kind of dinner! Why do it any different?/!

I will post the pictures tomorrow and give you a weekend update!

Annoying!

So I went and got a Starbucks latte this morning and thought "i'll have it iced". I don't think i've had it iced before so adding that extra word through me off. Boy was it yummy!!!

I went and got another latter this afternoon to give me some energy for the gym later and as I was walking over there it dawned on me the last one I had was not made with skim but made with whole milk. F me. That is a difference of 100 calories and 10 grams of fat. I am so pissed. It's my own fault but it ticks me off! Only because I was in a hurry! Righttt!

Oh well, guess it would be same as having a 100 calorie cupcake pack, which actually would have tasted better!

Enough on that! It's really cold in here, I'm trying to figure something yummy for our last dinner together until next Tuesday. We had garlic cheese turkey burgers last night and pico de gallo on top of grilled chicken with cheese. Both of which were made with no help from myself. So me coming up with something is well a bit changeling! Any thoughts?
