I'm back on this allergy diet and this time they have added both turkey and chicken, so if you're keeping track (eggs, wheat, soy, milk, all nuts, shell fish, beef, and corn, and now chicken and turkey).
Pretty sure that is about 99% of all food out there, so it's been a very long last month and I have until Mid-April. SO with that all being said, I have to be crafty with what I eat, and that means prep, prep, prep.
I've tested out a few different versions of the same things, and I have become OBSESSED with lettuce wraps, if it can be put in a wrap and isn't on the above list I'm all over it! So given tuna fish is a) one thing I can have as a protein b) lower in calories and c) i actually really like it. So I decided to put my own twist on tuna salad.
Below is three cans of albacore tuna, about 50 dashes of hot sauce (i put that bleep on everything) and chopped celery. So if you think about it it's like having a buffalo chicken wing. Right?
I also made a pot of chili, it's been my new thing, trying to prefect the perfect chili, this time I have to use ground pork, it's pretty good if I do say so myself! Again tons of hot sauce is key along with red pepper flakes.
I have been living off of fruit, veggies and a ton of potatoes (chips). OH and I am able to have chocolate chips, so yeah, those by the handfuls!
ANY tips would be more than welcome.

Hey dear! It's almost lent for me, so I'm about to go Vegan. Perhaps a good Vegan Cookbook, and leave out nuts when it's called for? And this is going to sound really weird but hear me out...goat. It's delicious.
Ah yes, that's the worst when you have to stay away from certain foods.
I love the idea of the tuna lettuce wrap - it sounds delicious. I'm always doing a vegan thing now and again (though can't do it always, I love a good steak more than life itself, so....but it's good to do 5 days a week anyway!). I'm always roasting vegetables with brown rice and hummus. You'd be amazed at how filling it can be - and good for you too!
Hi Kimba,
I'm new to your post and love it already! We've also had allergy/intolerance food issues during the past two years. I'll have to try your tuna recipe-I love lettuce wraps also. Jicama is a great veggie and very versatile to use with hummus, other dips, with chili powder and lime, in salads, etc. I am very glad to hear you can have chocolate chips. That is quite a list of foods to avoid. Do you like lamb? If you marinate it in lots of lemon juice, garlic, herbs and mint it roasts up really well on kababs.
This is my first time to come across your site and im loving it. I will reading for more of your post.
For me, i can't live without eating fruits specially mangoes, melons, oranges and pomelo.
